Torrijas (Spanish version of French Toasts) 

Torrijas date back to the 15th century and, like many other Spanish desserts, it was created by nuns. 
 
This recipe is perfect to take advantage of stale bread and create a delicious breakfast.
 
 
Preparation
  • Take 1 stale bread loaf from the day before and cut it into 1 inch slightly diagonal slices. Place them on a shallow dish that can hold up to 4 cups of milk.
  • Put 3-4 cups of milk in a saucepan with 3 tbsp of sugar, 1 cinnamon stick, and 1 lemon peel. Bring to a boil. 
  • Discard the cinnamon stick and the lemon peel, then pour the milk on the bread and let soak for one hour. 
  • Beat 3 eggs in a plate large enough to hold at least one slice (torrija).
  • Heat olive oil to medium in a large frying pan. With a large spatula, carefully transfer the soaked slices one by one into the egg and turn them to coat. Then dip the slices into the hot oil.
  • Fry for 3-4 of minutes on each side, until brown.
  • Take out to a dish lined with a paper towel and thoroughly sprinkle with powdered sugar and cinnamon. 
Recommended Breads
 
The best breads to use for this recipe are French Baguette or Sourdough because of its tight crumb.

Pesto caprese sandwich 

The Caprese sandwich is a classic Italian vegetarian sub, very easy to make, and full of flavor. It takes less than 10 minutes to prepare and it only has 5 ingredients.
 
For this type of sandwich, we recommend rustic Italian breads.
 
 
Preparation
  • Slice the bread and spread pesto with extra virgin olive oil on each side. 
  • Add sliced tomatoes and fresh mozzarella to the bottom slice of bread. 
  • Finish with basil leaves. You can also add salt and pepper if you like.
Recommended Breads
 
Rustic Italian breads such as bocata, chapata or mini-chapata.
 
* This sandwich is also delicious grilled or toasted in a skillet.

Best of the sea sandwich

In this balanced and fresh sandwich the taste of shrimp and salmon caviar draws attention and it contrasts with the arugula and alfalfa sprouts. It is an excellent source of vitamins and mineral salts* and it also contains a high 35% of protein and all the essential amino acids for a healthy diet. 
 
For this type of sandwich, we recommend artisan breads with accentuated flavors and alveolate crumbs.
 
 
Preparation
  • Put a thin layer of cooked potato in the base with a few drops of extra virgin olive oil.
  • Add grated carrot and the smoked salmon that will be seasoned with a few drops of Greek sauce or yogurt.
  • Put fresh cuttlefish on the grill, with a few drops of raw virgin olive oil, and finish with chopped chives.

 Grilled fruits and vegetables sandwich

Some fruits are good ingredients to consider for sandwiches. They provide a good contrast of flavors and textures that combine well with a base of grilled vegetables and fresh cheese. 
 
For this original and healthy recipe, we recommend you use artisan breads of attractive appearance and accentuated flavors. 
 
 
Preparation
  • On the bottom slice of bread, place thin slices of eggplant and zucchini prepared on the grill.
  • Add slices of apple, also passed through the grill, and then put pineapple, some white cheese cubes, and cherry tomatoes in the oven.
  • Finish with a touch of chopped chives.

Mini-rombo (shown in the picture) or mini-chapata for small sandwiches and bocata or half-gallega for bigger ones.


 Smoked salmon, potato and carrot sandwich

Salmon is one of the most popular fishes and most beneficial to health because it is very rich in omega 3 acids and an excellent source of protein. This sandwich recipe offers a very balanced meal with the hydrates from the potato and the bread. 
 
In this case, a white bread is recommended to enhance the flavor of its components.
 
Preparation

Preparation
  • Season the bottom loaf of bread with extra virgin olive oil, salt, and shredded tomato.
  • Pass grated carrots, zucchini, mushrooms, and green pepper through the grill and add on top of the tomato.
  • Add slices of chicken breast.
  • To finish, add a spoon of honey mustard over the chicken.

Roast beef sandwich

Did you know that traditional Italian breads are the best type to use for roast beef sandwiches? Its light but crispy outter shell and soft crumb potentiate the meat flavor and combine well with a wide variety of sauces. 
 
Preparation
  • Prepare a chipotle sauce with mayonnaise, pepper, garlic, lime juice and salt.
  • Spread the sauce over the bottom loaf of bread.
  • Sprinkle pieces of blue cheese.
  • Add slices of roast beef, onion, tomato, and lettuce.
  • To finish, spread another spoon of chipotle sauce over the top loaf of bread.
Recommended Breads
 
Ciabatta, rustic Italian bread (baston cocido), bocata, or mini-chapata.
